Here is an easy recipe from Gooseberry Patch Christmas in the Country:
6-8 quarts potatoes,peeled and quartered
1/4 cup butter, softened
8 oz pkg cream cheese, softened
Boil potatoes until tender; drain. Combine potatoes, butter and cream cheese in large bowl; let stand for 10 minutes or until cream cheese melts. Mash until smooth. Refrigerate until serving time; reheat in microwave. Serves 6. OR instead of using the microwave, I use a crock pot on low, stirring occasionally. These are great for the holidays, one less thing to do at the last minute!

This sounds great. Now I know how to have my potatoes ready for lunch for after church on Sundays.
